Lemon berry celebration sponge (egg-free, dairy-free, vegan)

IMG_2638Look at that. No blog posts for a month, then two come along at once.

Yesterday, it hoofed down with rain, so there was absolutely no possibility of a walk. With no plans  for the day and a full complement of building team downstairs, it seemed an ideal opportunity to try out my (hopefully) final version of an egg-free, dairy-free (and ergo vegan) sponge cake. Particularly ideal because the said large quantity of blokes meant nothing lying around to scupper my diet later in the day.

Before you all go ‘ugh, vegan,’ I promise you this cake is nothing short of delicious. It has a really nice crumbly texture and a crisp top (it would have been even crisper if I had not forgotten to scatter some sugar on the top before I put it in the oven – it had already started to rise when I thought of it, so I left it naked). And it is filled with lemon and lime ‘buttercream’ with fresh raspberries and blueberries – who could turn their nose up at that? An Easter passion cake

IMG_1911.jpgWe have our friend Mela visiting Kaş from Canada at the moment. She has been brave enough to accompany us on a couple of walks this week – unfortunately, although she wore her hiking boots on the plane so that they couldn’t get lost, they repaid her for this kindness by parting company with their soles on the first trip out. They spent a night being super-glued in the cobbler’s vice in town, so she decided to give them another go yesterday. A very lemony lemon meringue pie

IMG_1422.jpgOur friends have sold their apartment and the deal concludes this coming week, so they are having a farewell dinner for a few of us this evening. My task is to bring the pudding. I had planned to make Heidi’s Tongan coconut tart, which we came across on our recent holiday there (a kind of lovely gooey coconut custard in a crunchy case). Unfortunately, one of the other guests hates coconut, so I’ve had to have a re-think. I WILL do the coconut tart, but you will have to wait a bit longer for that one. There are so many variations – sometimes we have classic French-style poulet aux herbes, others we go a bit more exotic with Thai or Chinese flavours, and then there’s the good old British roast with stuffing and roasties.
