Broccoli & cauliflower soup with Cornish Blue

Broccoli soupMore cold weather, more soup. I could happily live on soup – there are so many variations that each one is like having a completely different meal. From something fast to throw together after work, like Pea & Mint or super-quick Thai Noodle, all the way up to slow-cooked Oxtail & Pearl Barley or Goulash Soup with Caraway Dumplings at the more ‘hearty and cockle-warming’ end of the scale, there’s definitely a soup for every mood.

Today’s recipe is for something that sits nicely in between – warming, hearty and tasty, with the bonus of being simple to prepare and quick to cook. The blue cheese (or any type of cheese that you like) really does make things extra moreish. Robin ran amok on a Cornish cheese website a few weeks ago, and I received a surprise package of a whole wheel of Yarg and half of a wheel of Cornish Blue. We seem to have been eating it forever, but it’s still taking up half of the bottom shelf of the fridge – though there are surely worse problems in the world than too much cheese. Farmhouse fruitcake (vegan)

IMG_3325.jpgI’ve just been looking on the memory card on my camera to find the photos for this bake, and I came across some shots I took when we went to Kastellorizo a couple of weeks ago. The harbour there is always a good place for loggerhead turtle spotting – before we’d even reached the hotel, we were treated to a group of three of them playing together in the water near to the harbour wall.

They are such fantastically benign creatures, who don’t seem to mind at all if we are swimming next to them, and they’ll often pop up in an inquisitive way near the harbour wall or next to the boat to see what’s occurring in the human world. Continue reading “Farmhouse fruitcake (vegan)”

Fruity banana muffins – egg-free, dairy-free, vegan

IMG_3248Have you ever seen such a forlorn fruit bowl? A couple of pomegranates – fresh from the tree in the garden of Erol’s garage, where our car had its pre-MOT checks this week – alongside the inevitable black bananas (see last week’s post) and a lonely as-yet-unripe avocado.

Last week’s banana drizzle cake had an undignified ending. Having no Tupperware box the right size or shape, I put half in the freezer and wrapped the rest in clingfilm and put it inside the cold oven, where I thought it would be safe from the attentions of Annie Cat (the four-legged midnight stealth shopper). It had companions in the form of a half loaf of soda bread and some leftover simits. I am sure you can guess where this is going – the following day when I turned on the oven, I only remembered they were there when I smelled the plastic melting. The banana bread was totally shrink-wrapped in a coffin of melted clingfilm. Its friends were similarly entombed and also had to be jettisoned. Ooops. Lemon berry celebration sponge (egg-free, dairy-free, vegan)

IMG_2638Look at that. No blog posts for a month, then two come along at once.

Yesterday, it hoofed down with rain, so there was absolutely no possibility of a walk. With no plans  for the day and a full complement of building team downstairs, it seemed an ideal opportunity to try out my (hopefully) final version of an egg-free, dairy-free (and ergo vegan) sponge cake. Particularly ideal because the said large quantity of blokes meant nothing lying around to scupper my diet later in the day.

Before you all go ‘ugh, vegan,’ I promise you this cake is nothing short of delicious. It has a really nice crumbly texture and a crisp top (it would have been even crisper if I had not forgotten to scatter some sugar on the top before I put it in the oven – it had already started to rise when I thought of it, so I left it naked). And it is filled with lemon and lime ‘buttercream’ with fresh raspberries and blueberries – who could turn their nose up at that? Pumpkin and spinach coconut curry (vegan)

Now we are back to rain and hailstones with winds from Russia and Bulgaria, which are by no means tropical even before they’ve swept down over our very snowy mountains. Spicy lentil ‘shepherd’s pie’ (vegan)

IMG_1601.jpgAnother grey day, though it hasn’t actually started raining (so far). I feel a day of catching up with a few jobs coming on, interspersed with a spot of light blogging activity. I think we are having a 5:2 day too – I was put off eating any breakfast this morning by having to deal with the regurgitated remains of a mouse – at least I think that is what it started life as – which had been left in the middle of the kitchen terrace, so I’m off to a good start. Extra-gingery ginger fairings (vegan)

IMG_1511_renamed_28603.jpgYou can tell by the little flurry of blog posts that today has been rainy, windy and largely unpleasant. The rain has now stopped and we have a bit of weak sunshine, so Robin’s been dispatched to get more wood before it starts again (I can’t get the wood in, I’m far too busy using up oranges that he’s picked for me).

Some friends have just been for coffee, so I made a quick batch of ginger biscuits by way of a treat. As we are trying to follow a vegan diet at the moment, of course these are a vegan version – but the only change I had to make was to swap the butter from my original recipe for vegetable margarine. They turned out surprisingly well – in fact, I am not sure that they are not better than their buttery cousins, which can tend to burn around the edges before the centres are cooked. Vegan ‘Cornish’ pasties

img_1483Today is the first day of our vegan adventure, inspired by the Veganuary campaign. We really should have started yesterday – what with it being the first day of January and all that – but we only got back from our trip on Saturday and we’d invited Linda for Sunday supper, so it didn’t seem appropriate. (Roast chicken with all the trimmings, followed by mince pies, since you ask).

So far, so good. Breakfast today was Bircher muesli, made with apples and almond milk – slightly on the soggy side for my liking, but Robin pronounced it delicious.
