I can never decide whether these should be called cookies or biscuits. Referring to them as biscuits runs the risk of American followers thinking they are going to get something that resembles what we call a scone, and I’d hate to think of them racing out to the nearest shop to buy clotted cream and jam, in anticipation of a Cornish-style cream tea, then realising they’re stuck with a cookie. Extra-gingery ginger fairings (vegan)
You can tell by the little flurry of blog posts that today has been rainy, windy and largely unpleasant. The rain has now stopped and we have a bit of weak sunshine, so Robin’s been dispatched to get more wood before it starts again (I can’t get the wood in, I’m far too busy using up oranges that he’s picked for me).
Some friends have just been for coffee, so I made a quick batch of ginger biscuits by way of a treat. As we are trying to follow a vegan diet at the moment, of course these are a vegan version – but the only change I had to make was to swap the butter from my original recipe for vegetable margarine. They turned out surprisingly well – in fact, I am not sure that they are not better than their buttery cousins, which can tend to burn around the edges before the centres are cooked. I’m making our friend Linda a little Christmas hamper, so that she has a few yummy goodies to tuck into if she is at home in front of the fire over the next week while we are away. Crunchy rosemary multi-seed crackers
Our internet connection is being super-unfriendly this morning. It may take me until about next Thursday to actually load this post, the way things are going.
After a very dry spring, followed by weeks of unsettled weather, both rainy and windy at times, there are signs that summer has finally arrived. One sign was that I actually got into the pool yesterday after making myself hot doing a few housekeeping chores. I think it is possible that I stayed in there for all of 4 seconds – basically the time it took me to get back to the side and leap out before any polar bears lurking in the Arctic conditions got wind of my presence. Toast and Marmalade looked on from the safety of a sun-lounger – I am sure I caught sight of them shaking their furry heads in wonderment at this crazy behaviour.
